A Sunday Well Spent: Grocery Shopping, Apple Crisp Baking, and the Simple Joys of Home

Today was one of those perfect days – the kind where you can open the windows and let the fresh air sweep through the house, instantly uplifting your mood. I started my morning with a stroll through Savers thrift store, iced Starbucks coffee in hand, taking my time to browse through the aisles. Surprisingly, I left empty-handed, a rare occurrence for a thrift store enthusiast like myself.

Next, I headed to Wegmans, where my wallet took a hit as I stocked up on groceries for the week. When I got home, as I was organizing the pantry, I discovered a stash of about two dozen apples from the previous week. My kids had specifically requested them, so I bought a 5lb bag, only for them to eat barely any. Isn’t it funny how that always seems to happen with perishable items?

Later tonight, we’ll dig into the tasty apple crisp, loading it up with a big scoop of vanilla bean ice cream. It will be a great way to end the day and weekend.

Here’s how to make it:

Ingredients

  • â–¢6 apples, peeled and chopped
  • â–¢2 Tbsp granulated sugar
  • â–¢2 Tsp ground cinnamon
  • â–¢1 cup light brown sugar
  • â–¢3/4 cup old-fashioned oats
  • â–¢3/4 cup all-purpose flour
  • â–¢1/2 cup cold butter, diced into small cubes
  • â–¢Pinch of salt

Instructions

  • Preheat oven to 350 F degrees.  Butter an 8×8 baking dish, or spray with non-stick cooking spray.  Set aside.
  • In a mixing bowl, add chopped apples, granulated sugar, and 1 tsp of the cinnamon.  Stir to combine, then transfer to the prepared baking dish.
  • In a separate mixing bowl, add the topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter).  Use a pastry cutter to cut the butter into the oat mixture, using a slight downward twisting motion, until the mixture resembles pea-sized crumbs.  Alternatively, you can use two forks or even your hands to cut butter into the mixture.
  • Spread topping over apples in the baking dish, and gently pat to even it out.  Bake for 40-50 minutes, until golden brown and bubbly.
  • Serve alone or with vanilla bean ice cream and enjoy!
